FDST 2103 - Alternative Diets FDST 2103 - Alternative Diets Description This course reviews low glycemic diets, food allergies and sensitivities, vegan and vegetarian diets, kosher and halal, macrobiotic, Ayurveda and paleo diets. Students will learn the scientific, historical and cultural basis for a variety of diets. Students will be introduced to a variety of ingredients and cooking methods that meet the needs of special diets. Students will prepare a variety of dishes following dietary guidelines. A themed final project will require students design a four-course meal that meets the guidelines of a selected diet. 3 Credit Hour(s) Semesters all, Spring, Summer ACTS Equivalent N/A Grade Mode A-F
