CHEM 072 — FOOD CHEMISTRY AND FOOD SCIENCE

3.00 Units (Lec 3 Hrs) Transfer Credit: CSU, UC Prerequisite: CHEM071 The student will be introduced to the principles and applications of food science and technology. The course covers food chemis - try, microbiology and sensory evaluation of food products. Topics related to safety, sanitation and governmental food regulations will be discussed. Fundamentals of food engineering including heat transfer, mass transfer, rheology, packaging and food preservation will be explored.
