NCA 031 — Taste of Mexico

Provides students with an introduction to food from different regions of Mexico. This course will cover the principles of proper sanitation and equipment use, salsas and sauce production. Marinated and cooked meats, tortillas, soups and other classic and new classic Mexican dishes. Class time will include lecture and work-based, practical learning experience.
